🥄 Ingredients
- 3 kg fresh spinach,
- 0.5 kg 20% fat minced meat,
- 3 tablespoons ghee,
- 2 tablespoons minced garlic,
- 1 tablespoon dried coriander,
- 1 tablespoon black pepper.
👩🍳 Instructions
- Chop the spinach into medium-sized pieces, wash it, and place it in a pot with a little water. Cover and let it boil for just 5 minutes, stirring occasionally to ensure it's all heated through. Drain the spinach in a colander without squeezing it. In a separate pan, heat the ghee and sauté the garlic until golden brown. Add the coriander and cook for another 3 minutes. Now, add the meat to the mixture, breaking it up and breaking it up. Cover and cook over low heat for 1.5 hour. Place the strained spinach over the cooked meat, which should be tender and dry. Stir the spinach into the meat to distribute it evenly, cover, and bring it to a boil. Then reduce the heat and simmer for another half 1 hour.
- Serve the spinach with a side of white rice.

In Aleppo, women squeeze the spinach after boiling it, which causes it to lose almost all its nutritional value; gradually reducing the heat from high to low gives it a different flavor and cooking time.
