🥄 Ingredients
- 750g lean minced meat
- 1/2 bunch chopped parsley (optional)
- 2 medium onions (350g) (optional)
- 1/2 tsp black pepper
- 1/2 tsp seven-spice mix
- 1/2 tsp salt
- 2 tbsp ghee for cooking the meat
- 100g pine nuts (if available)
- For the zucchini:
- 2 kg large zucchini (depending on the season)
- 1 kg full-fat yogurt
- 1 tbsp minced garlic
- 1/2 tsp dried mint
- Oil for frying the zucchini
👩🍳 Instructions
- Meat Preparation:
- Chop the onion and sauté it in a tablespoon of ghee or oil until softened. Add the meat and cook, breaking it up into pieces. Cover and cook over low heat for 1.5 hour. Add the seven-spice mix, black pepper, salt, and pine nuts.
- Zucchini Preparation: Wash the zucchini thoroughly to remove any dirt. Cut it into thick slices about 3 cm thick. Once the oil is hot, fry the zucchini slices until golden brown, not dark brown.
- After frying, add the zucchini to the meat you prepared earlier. Add a cup of boiling water, salt, and black pepper. Let it simmer over medium heat for about 15 minutes.
- Yogurt Sauce Preparation: In a deep bowl, combine the yogurt, garlic, and mint. Mix well until smooth. Serve cold with rice and the zucchini slices.
