  1. Wash the lentils, then add the water, onions and carrots and place over the heat for about half an hour, or until the lentils burst and dissolve completely.
  2. Once the vegetables are cooked and the lentils have dissolved, add the stock cubes, salt and cumin. Let it boil for another 5 minutes, then blend with a hand or stand blender until smooth and silky.

Melt a tablespoon of ghee into the soup just before serving โ€” it gives a rich, unforgettable flavour.
