๐ฅ Ingredients
- 500 g peeled red lentils
- 250 g chopped carrots
- 500 g sliced onions
- 1 tablespoon cumin
- 1 teaspoon salt
- 2 chicken stock cubes
- 8 cups water
๐ฉโ๐ณ Instructions
- Wash the lentils, then add the water, onions and carrots and place over the heat for about half an hour, or until the lentils burst and dissolve completely.
- Once the vegetables are cooked and the lentils have dissolved, add the stock cubes, salt and cumin. Let it boil for another 5 minutes, then blend with a hand or stand blender until smooth and silky.

Melt a tablespoon of ghee into the soup just before serving โ it gives a rich, unforgettable flavour.

Garnish each bowl with finely chopped parsley, or finely minced spring onions.
