  1. Clean the okra if it's fresh and cut it into your desired size. If it's frozen, soak it in boiling water immediately. Don't remove it from the freezer beforehand; put it directly into the boiling water.
  2. Heat olive oil in a suitable pot. Add the garlic and sauté until golden brown. Then add the dried coriander and sauté with the garlic for 2-3 minutes. Add the okra and sauté for 5 minutes. At this point, add the tomato paste, chopped tomatoes (not too large or too small), salt, and a cup of boiling water. Stir well, cover the pot, and simmer over low heat for 30 minutes, or until the okra is tender.
