Fried Broad beans
Tender green broad beans sautéed in extra virgin olive oil with garlic and fresh coriander. A light, flavorful vegan dish served warm or cold with pita bread.

🥄 Ingredients
- 900 grams or two bags of green beans in their pods
- 3 tablespoons minced garlic
- 2 bunches fresh coriander
- 1 cup good quality olive oil
- 1 tablespoon vegetable flavoring powder
👩🍳 Instructions
- If using frozen fava beans, empty the contents of two bags into boiling water and set aside until ready to use. Do not thaw the beans prematurely without boiling water; this will negatively affect their flavor and nutritional value.
- Wash the cilantro before chopping it, dry it, and finely chop it. Set aside until ready to use.
- Heat oil in a suitable pot over medium heat until it is half-hot. Add the garlic and sauté until golden, but not brown. Drain the fava beans and add them to the pot with the garlic. Stir, sprinkle with the seasoning powder, and cook for two minutes. Cover the mixture and cook for about five minutes. Pour a cup of boiling water over the beans and let them cook for 15 minutes.
- Add the fresh cilantro and stir it into the beans. Ensure the beans are cooked through and then remove from the heat.
- Be careful with the salt. I didn't mention salt because the seasoning powder is usually salty, and fava beans don't tolerate much salt.

I recommend frozen fava beans over fresh ones for this dish because fresh fava beans tend to be a bit tough.
