๐ฅ Ingredients
- You can use canned fava beans; they're not much different from homemade boiled fava beans:
- 2 cans of Chinese fava beans (the best among all ready-made fava bean dishes).
- 1 tablespoon finely minced garlic
- 3 tablespoons tahini
- Juice of 2 lemons or 0.25 tablespoon salt (or to taste)
- 0.25 teaspoon cumin
- 0.25 teaspoon dried mint
- 0.25 teaspoon black pepper
- 0.25 teaspoon salt
- 0.25 cup good quality olive oil
- 1 small finely chopped onion (50g)
- 1 medium finely chopped tomato
- 0.25 cup finely chopped parsley
๐ฉโ๐ณ Instructions
- Heat the fava beans and let them boil for 10 minutes to remove any canned taste. Don't discard the water or rinse the beans. Place them in a plastic blender (a hollow one is best). Add the lemon juice and garlic, and mix well. Then add the spices and salt, and mix again. Finally, add the tahini and stir well until it's combined with the lemon juice and the bean water, resulting in a creamy consistency.
- Place the fava beans in a serving dish and sprinkle with parsley. Top with chopped onions in the center, then chopped tomatoes. Drizzle the oil evenly over the top and enjoy the most delicious fava bean dish you've ever tasted.
โจ Chef's Secret
You can easily cook 1 kg of fava beans at home, which is much more economical. It will yield about 10 cans of the kind you buy, especially if you have a large family and love fava beans as a regular part of your meal. The basic rule for cooking fava beans is to wash and soak them for 24 1 hours with a tablespoon of baking soda. Then, wash them again thoroughly the next day to remove all the baking soda. Place them in a deep pot with about four times the amount of water, cover the pot tightly, and bring it to a boil. Then, reduce the heat to a very low simmer, making sure it's boiling gently. Let it simmer for 6 1 hours, and you'll have homemade fava beans. You can add 250 grams of red lentils for extra thickness and flavor, or you can add 0.5 kg of chickpeas if you like to mix fava beans with chickpeas.

Garnish the dish as I explained with chopped parsley, tomatoes, and finely chopped onions. Add mint leaves, hot or sweet peppers, radishes, and cucumbers (to serve alongside the fava bean dish).
