🥄 Ingredients
- 1 kg large green okra
- 3 tablespoons finely minced garlic
- 1 tablespoon dried coriander
- 1 red paprika pepper
- 1 teaspoon salt
- 1 teaspoon black pepper
- 250 g extra virgin olive oil
- 1 cup water
👩🍳 Instructions
- Trim the okra by removing the dry tops, then slice each into rounds. Cut each round into at least four wedges crosswise.
- Heat olive oil in a pan, then add the garlic and sauté until golden. Add the dried coriander and cook until fragrant. Add the red pepper and cook for two minutes. Then add the washed and sliced okra and cook for five minutes over high heat.
- At this point, add salt, black pepper, and a cup of water. Stir, cover the pan, and let it simmer for 15 minutes, or until the okra is tender.
🌹 Decoration
Garnish the okra with lemon slices. This dish is eaten by dipping bread in it, not with rice.
